Cut the eggplants into small round pizza bases. Rub with olive oil and salt and bake in the oven at 200 degrees for 10 minutes. Take it out of the oven, add grated cheddar cheese and cherry tomatoes and bake again until the cheese melts. You can serve it by adding pesto sauce on it.
